GOYA brand Cream of Coconut is a unique blend of various ingredients and emulsifiers. The ingredient statement is: COCONUT MILK, SUGAR, POLYSORBATE 60, SALT, CITRIC ACID, MONO AND DIGLYCERIDES, PROPYLENE GLYCOL ALGINATE, GUAR GUM AND LOCUST BEAN GUM. Each ingredient has a slightly different viscosity and when stored for some time the consumer may notice a product that looks to be separating. If the product is stored at cool or cold temperatures it may look solid or separated when opened.
Coconut milk is high in coconut fat content and in order to ensure a homogeneous product we add certain emulsifiers and stabilizers. However, we indicate to “Shake Well Before Using” on the label.
